Ingredients:

For the Dough:

  • 3 cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 cup warm water (about 110°F)
  • 2 tbsp olive oil

For the Filling:

  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese (or Georgian Sulguni cheese if available)
  • 1/2 cup ricotta cheese (optional)
  • 2 eggs
  • 2 tbsp butter

Instructions:

1. Prepare the Dough:

  • In a small bowl, mix the yeast, sugar, and warm water. Let it sit for about 5-10 minutes until it becomes frothy.
  • In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil.
  • Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover it with a cloth, and let it rise in a warm place for 1-1.5 hours or until it doubles in size.

2. Prepare the Filling:

  • In a medium bowl, mix the mozzarella, feta, and ricotta (if using). Set aside.

3. Shape the Khachapuri:

  • Preheat the oven to 450°F (230°C).
  • After the dough has risen, divide it into two equal parts.
  • Roll each part into a round, about 8-10 inches in diameter.
  • Fold the edges of the dough inward and pinch the ends to form a boat-like shape.
  • Spread the cheese mixture inside the center of the boat.

4. Bake the Khachapuri:

  • Place the khachapuri on a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until the dough is golden brown and the cheese is bubbling.

5. Add the Egg and Butter:

  • Remove the khachapuri from the oven and crack one egg into the center of each cheese boat.
  • Return to the oven and bake for another 3-5 minutes until the egg white is set but the yolk remains runny.
  • Add a small knob of butter on top just before serving.

Serving:

  • Mix the melted cheese, butter, and egg together with a fork and use pieces of the bread to scoop it up.
